MASH and Le Sommelier to open at Copenhagen Airport
Copenhagen Airport is pleased to announce that two popular Copenhagen restaurants, MASH and Le Sommelier Bar & Bistro, will open in Terminal 2 in 2012. SSP is the business partner behind the venture, which is part of Copenhagen Airport’s strategy of offering passengers the right mix of international brands and Danish ‘local heroes’.
Superb steaks and sublime French bistro classics will be on the menu when MASH and Le Sommelier Bar & Bistro open their new restaurants in Copenhagen Airport’s Terminal 2 in 2012. Both will open in a partnership with food and beverage operator SSP, with whom CPH recently prolonged its long-standing collaboration.
“The strategy for our food and beverage services is to create the right mix of international brands and local heroes. When SSP presented these two strong Copenhagen brands which we had had our eyes on for a long time, there was no hesitation. We look forward to continuing our partnership with SSP and to offering our passengers a taste of the best Copenhagen has to offer starting in 2012,” said Carsten Nørland, VP Sales & Marketing for Copenhagen Airports.
A prestigious location
The team behind Le Sommelier and MASH looks forward to opening at the airport, “It has always been our ambition to operate a restaurant in a prestigious location such as Copenhagen Airport,” said Francis Cardenau, founding partner of MASH and Le Sommelier. “Our new location at the airport and our collaboration with SSP will no doubt help us strengthen our international profile and hopefully create new opportunities for opening locations outside Denmark, perhaps also at other airports.”
In addition to MASH and Le Sommelier Bar & Bistro, SSP will also be behind two new delis that will open under the name Food Market and More. Here, SSP will team up with a group of Danish master chefs to develop a menu ranging from soups, sandwiches, salads and cakes to go to a selection of pizzas, burgers and other hot meals.
“Our continued collaboration with CPH will consolidate our business in one of our key markets. Scandinavia has always been an important market to us, and the new contract with CPH allows us to further develop our current success in the region,” said Henrik Andersen, head of SSP’s Danish operations.
CPH has worked with SSP since 1975. Today, SSP is Denmark’s largest food and beverage operator.

A taste of Copenhagen on the go
Inspired by the large steakhouses in New York, MASH (Modern American Steak House) offers sophisticated American food with an informal Danish touch. MASH opened in the heart of Copenhagen two years ago and quickly became renowned as the city’s must-visit steakhouse. The restaurant has been fully booked every evening ever since it opened. MASH offers quality meat cuts such as NY Strip, Ribeye and Porterhouse steaks, complemented by an exciting and carefully composed wine list.
Le Sommelier Bar & Bistro is a beacon on the Copenhagen restaurant scene, and from 2012 passengers will be able to enjoy the restaurant’s French bistro cuisine and atmosphere at the airport. Le Sommelier Bar & Bistro will cater both to travellers who want to drink a quick beer and have a snack in the bar and to passengers with plenty of time to enjoy an authentic, high-quality meal in the more relaxed lounge area. |
