Scandinavian tapas at the airport
A bright and friendly setting without walls. A large and open kitchen. 208 seats in a minimalistic style. This is the framework of restaurant Eyecon opening today at the airport.
The menu will be a tapas menu, but not the traditional version of small Spanish delicacies we know. Eyecon will serve Scandinavian tapas made from the best foods in season, and new dishes will be added to the menu regularly.
”We would like to offer the best the European cuisine has to offer; fresh foods in an international atmosphere that may compete with city restaurants and perhaps one day become the best airport restaurant in the world,” says Henrik Boserup, chef and consultant to Select Service Partner, which is behind the concept.
Passengers’ new expectations
As regards the choice of the new restaurant, Henrik Busch, Vice President of Copenhagen Airports, says:
”Today, passengers make very different demands regarding the surroundings they choose to have their meals in. Everywhere in society good and healthy food is in focus, but passengers have also become much more aware of the whole – lighting, furniture design and much else. At the airport, so many factors must be combined in a coherent whole: choice, time, quality and price and also to a high degree the surroundings in which the food is served. I believe Eyecon has succeeded in combining these requirements.”
